Abstract

The shells of cocoa beans are considered as unused agro-industrial waste. In Ecuador there are several cocoa industries, which generate significant amounts of this waste. In this research, the shells were coming from the National Arriba cocoa almonds were used for the production of flour in order to analyze its nutritional characteristics, where the important nutritional value of the same was confirmed, for its use in the bakery industry, as a food supplement or for other uses for human consumption in baked products.
